Freezer Cooking - Round 1

In the summer, there are a lot of nights where it is too hot to really want to cook or we're working outside until kind of late and 7:30 is not a good time for the question "so what should we eat for dinner". So I did a first round of freezer cooking to see if I could keep us going for a couple weeks without much cooking. We've now eaten all but one of the things I froze, so I deem the first freezer cooking a success.

Meals: I only froze main dishes for dinner, as we don't really eat breakfast, we both pack lunches to take to work, and for side dishes we always eat spinach salad and I usually just make some rice or instant potatoes and pull some rolls out of the freezer.

So the dishes were:
-Cavatelli (a recipe from my mom...kind of like lasagna but with mostacciolli noodles instead)
-Two meals worth of Southwest burritos (Recipe from monesavingmom.com)
-Porkchops with garlic-lime vinaigrette (Recipe from onceamonthmom.com)
-Meat for Mexican Cheese Soup (from a Taste of Home cookbook)
-Two meals worth of Pulled pork sandwiches and pork tacos (for the tacos I just add some salsa and taco seasoning to the pulled pork)
-Brats (okay, so no skill here, I just put some brats and buns in the freezer so they were there when I wanted them)

So it was like 10 meals, plus a couple meals of leftovers. We've eaten everything except for the Mexican Cheese Soup, as it's been really hot and soup didn't sound so good. It took ~2 hours to make everything, except for shredding the pork that was still in the crockpot. It's been almost three weeks since I did my freezer cooking, and I haven't really cooked since then.

I'm ready for another round, though I think I'm going to take a week here and just do some regular cooking. I've stockpiled some things with recent price matching and my aldi coupon, so I feel like I just need to cook through some of the stuff in my pantry.
